Soup Season is Upon Us: Corn Chowder
Soup season is finally here~! So I have a Corn Chowder recipe for you today.
Corn Chowder~
2 Cups Corn (Fresh or canned) *See note*
1 Lb Bacon (Chopped)
2 Lbs Potatoes (Cubed)
2 Carrots (Cubed)
1 Large Onion (Cubed)
2 Stalks Celery (Cubed)
1 Cup Heavy Cream
2 Cups Milk
2 Cups Chicken or Vegetable Stock
1 Tsp Ground Coriander
1 Tsp Black Pepper
1 Tsp Paprika
1 Tsp Parsley
1 Tsp Marjoram *Optional*
1/2 Tsp White Pepper
4 Tbsp Unsalted Butter
4 Tbsp Flour
Steps:
1. In a large pot or dutch oven, brown the bacon reserving some for garnish with the soup.
2. Once bacon is browned, leave about a tablespoon of bacon grease in the pan, add in butter and spices, sauté the vegetables until brown.
3. As soon as the veggies are browned add in your stock, milk, and heavy cream and allow to simmer until the potatoes are tender.
4. Taste for salt and seasons, adjust if needed at this point.
5. Garnish with reserved bacon, and serve.
*Note: If youre using fresh corn be sure to throw the cob into the soup to simmer after you take the kernals off to add extra flavor to your soup.

So how is everyone's life going? Ive been working and running around trying to get the house done. We decided to renovate 3 rooms at the same time and while the office is almost there, and the bedroom is 1/2 way there... the bathroom is still untouched but ya know sometimes life just gets in your way and you just have to truck on through.
I also had to put one of my dogs to sleep last weekend. His tumor had returned, his body was deteriorating and he was a 14 year old Chihuahua. A good boy for the most part, he was a bit bite happy. But over all, a wonderful little cuddle bug to be with. He'll be missed but well loved even in his afterlife. He joins my other dogs and pets in the little garden cemetary we have. (A bit morbid but also, beautiful as life is returned to earth.) Its a reminder that life is a priviledge.
And seeing as I'd like to not end this blog on a sad note so the highlights of the week:
Planning the garden bulbs and vegetables for next year.
A return to painting.
New psychiatrist is awesome.
And we'll take the wins.
