Blinking and its a New Year~ and Loaded Potato Soup
So somehow in the blink of an eye its the new year... HAPPY NEW YEAR!!! I've had a few happy accidents in the office so I now have a new art shelf and more storage. Always a good thing.
My husband has covid and I'm still in the clear. So here is a Loaded Potato Soup recipe for you all.
Loaded Potato Soup:
Feeds: 4-6
Prep and Cook Time: 45mins.
1 lb. Black Forest Bacon (Any will do this is just my favorite)
5 Large Potatos (Russet, or Yukon Gold works best here)
1 Large Onion (diced)
2 Carrots (diced)
2 Tbsp Butter or Olive Oil
3-4 Sprigs Spring Onion (chopped)
2 Tbsp Parsley (Chopped)
2 Cups Chicken Broth (you can use vegetable broth)
2 Cups Half and Half
1 Cup Cheddar (reserve some for garnish)
1 Tsp Chicken/ Vegetable Bouillon (Optional)
1 Tsp MSG (Optional)
1 Tsp Marjoram
1 Tsp Black Pepper
1/2 Tsp White Pepper
Salt to Taste
1. Chop bacon into 1/2" peices, potatoes diced into 1" cubes, onions and carrots diced, spring onions chopped and divided reserving greener parts for garnish.
2. In a large cassoulet brown the bacon and set asside, reserving some for garnish. Drain out some of the bacon grease leaving 1 table spoon, add in butter.
3. Sauté potatoes, onions, and carrots until lightly browned and add in liquids, and herbs and spices, as well as 1/2 of the cooked bacon.
4. Bring to a boil then allow to simmer for 20-30 minutes or until potatoes are fork tender. Add cheese and add more salt if needed at this point
5. Serve with spring onions, cheddar, and bacon as garnish and serve.

You can easily freeze this soup once its made to save yourself some time in the future or for a quick meal on a cold day. You can also customize this potato soup however you like. I often also add paprika and ground coriander to this soup. I wouldnt suggest using turkey bacon because it can get tough while cooking. Also, if you don't want to use bacon grease to cook with you can drain the pan and use only butter, olive oil, or a mix.
